Fat Free Homemade Bread with Seeds in No Time - Recipe

One thing that I can not get enough of and that will always be a part of my diet, no matter how often I hear it is not healthy, is bread. It comes in different tastes, shapes and color. And I love them all, especially French baguette.

Here is a super easy recipe for bread rolls that you can make in no time, without waiting hours for it to rise. They are perfect for your long Sunday breakfast, to serve with soup or making sandwiches with it for picnics. This is how you can make these delicious bread rolls:

Makes: 8-10 rolls

Ingredients:
5 dl self raising flour
3/4 tsp baking soda
2 tbsp golden syrup
1,5 dl water
1 dl sour cream
seed of your choice (I used pumpkin,  and sunflower seeds)
sesame seeds

Method:
1- Add the flour,baking soda and a generous sprinkling of pumpkin and sunflower seeds in a bowl and mix.

2- In a separate bowl add syrup, water, sour cream and mix well. Pour the wet mixture in the same bowl as the flour and mix with a wooden spoon until a smooth dough is formed. Add a little more flour in case your dough is very wet. 

3- Form the bread into 8-10 rolls of bread and transfer them to a baking tray layered with grease proof paper.  Flatten each roll slightly with the palm of your hand in the middle as they will rise. Brush them with little water and sprinkle sesame seeds on top.

3- Preheat the oven to 200 c degrees and bake the bread rolls for about 12-15 minutes or until golden brown

Bruschetta with Cherry Tomatoes and Mozzarella - Recipe

 For being somebody that love to cook, I can be really lazy sometimes and have zero inspiration. For those days, I still need to eat, and I prefer something easy, comforting and warm. For me, my Bruschetta with Cherry Tomatoes and Mozzarella are perfect for such days. 

My all time favorite inspirational YouTuber, Laura Vitale with her channel Laura in the Kitchen, is somebody I always go back to when I need easy and quick recipes. She makes the most delicious Italian food for all types of occasions. Her recipes are my first option I go to, when I need some great  and traditional meal ideas for those days I invite my Italian in-laws. She has at least 10 different ideas when it comes to do bruschettas. There are indeed endless variations and just use your imagination and you can create whatever topping you want for them. They are perfect to have as a snack, starter or side dish.

Ingredients:
13 cherry tomatoes, halved
1 mozzarella ball, shredded
few fresh basil leaves, chopped
1 French baguette, sliced diagonally
2 tbsp butter 
3 tsp of mixed dried herbs and garlic powder
1 pinch of salt and pepper and dried parsley 

Method:

1-Preheat the oven to 190C degrees. Wash and half the cherry tomatoes, shred mozzarella ball and chop the basil leaves. Mix it in a bowl and sprinkle over salt, pepper, and dried parsley to taste.


2- Slice the garlic baguette diagonally to get more surface, each slice should be ca 1/2 inch or 2 cm thick. Mix the butter with the dried herbs and garlic powder. Butter each slice of the baguette and add   an even amount of the tomato mix on each of them. In two of the slices I deliberately removed tomatoes as few family members don't like them.


3- Put the bruschetta slices on a baking tray and bake in the oven for 20 minutes or until golden brown and the mozzarella has melted.

Pizza with Homemade BBQ Sauce - Recipe


Whenever I ask family about dinner preferences, pizza frequently emerges as the easy favorite. The topping of choice is chicken, sweet corn, and BBQ sauce. Preferring not to purchase store-bought sauce due to its sometimes artificial taste, I enlisted my family's help to find an easy BBQ sauce recipe online. We experimented with various recipes and ultimately created our own unique blend. It was a hit with the family, and now it's our go-to sauce for pizzas.

Although I occasionally use pre-made pizza bases, I also enjoy making my own dough. My go-to recipe for quick pizza dough uses baking powder instead of yeast, eliminating the lengthy wait for the dough to rise.
Ingredients:

Pizza Dough:
6 dl of flour
2 tsp of baking powder
1.5 tsp of salt
100 g of butter
2 dl of milk

BBQ Sauce:
1 cup of ketchup
1 cup of water
3 tbsp of balsamic vinegar (or apple cider vinegar)
3 tbsp of brown sugar
1/2 tbsp of fresh ground black pepper
1/2 tbsp of onion powder
1 tsp of garlic powder
1 tsp of smoked paprika
1/2 tsp of ground cumin
1/2 tsp of ground coriander
1/2 tbsp of ground mustard
1 tbsp of lemon juice
1.5 tbsp of Worcestershire sauce
Salt and pepper to taste

Topping:
Grated cheese,
Diced grilled chicken breast,
Sweetcorn.

Method:

1- Preheat the oven to 210°C.

2- Begin by combining flour, salt, and baking powder in a large bowl. Incorporate the butter and milk, starting with a wooden spoon and eventually using your hands to mix it into a dough. Adjust with additional flour or milk if necessary. Then, transfer the dough onto a floured surface, knead for a few minutes, and shape it into a round ball.

3- Lightly flour the surface and roll the dough into your desired shape. I typically shape it into a square for easy cutting of uniform pieces.

Although the photo below shows a pre-made base, I normally use this recipe for pizza dough.


Place the pizza base in a greased oven tray and spread your BBQ sauce on top. Add the toppings, then bake in the oven for 20-30 minutes, or until it appears fully baked. Serve with a fresh and tangy pizza salad and dressing.

Light Chocolate Cake with Coconut and Almond Glaze

Chocolate and coconut is a combination that can never go wrong and an all time favorite flavor combo of mine. Just think about the bounty chocolate bar. My next cake recipe is a light chocolate cake with a sweet and delightful coconut and almond glaze. It is quite an easy cake and doesn't take much time at all. I hope you give it a try.

Recipe:

Ingredients for the cake:
100 g caster sugar
100 g self-raising flour
2 eggs
100 g butter
2 table spoon coca powder
1 tsp vanilla sugar or vanilla paste

Ingredients for the glaze:
4 dl desiccated coconut
3 table spoon roasted almond flakes
1 dl golden syrup
1,5 dl sugar
2 dl double cream
50 g butter

1- Begin with whisk butter and sugar for the cake until creamy in the consistence, then add one egg at a time and whisk for 10 second each. Preheat the oven at 180 degrees.

    





2- Sift the flour, vanilla sugar and cocoa powder and fold it in the wet mix. Then put it in a cake tin (see above photo).


3- Bake the cake for about 15 minutes until done. Check with a knife if it is done or not. 

4- While the cake is baking in the oven you can make the glaze. Simply add all the ingredients in a sauce pan and on medium heat. Let it come to a boil and then turn down the heat and let it simmer for 5 minutes.

      





 5- Take out the cake when done and spread the coconut glaze over it and put it bake in the oven for another 12 minutes until golden brown.




                                                    I like to serve it with a glass of milk :)

Light Coconut Cake - A family favorite

The other day, I was in the mood for something light and sweet. Naturally, I thought of my beloved sticky chocolate cake (kladdkaka), but it felt a bit too indulgent. I was craving coconut instead, so I decided to make a coconut cake—an easy, delicious option that always hits the spot.

Now, this cake can be made in  various ways, but the recipe I'm sharing has been a staple in my family for years. It’s our go-to for a quick and satisfying treat, perfect for any occasion. In fact, I whipped it up during a break while watching the heartwarming movie When Pigs Have Wings When Pigs have Wings.


Coconut Cake


Ingredients:
1,5 dl desiccated coconut
100 g butter
2 eggs
1 dl milk
3 dl self-raising flour
1 tsp vanilla sugar (or use 1 tps vanilla extract)
2 dl sugar
3/4 tsp baking powder
1/4 cup of toasted flaked almonds
(if using plain flower, add 1,5 tsp baking powder)

Process:
1. Preheat the oven to 170°C (340°F).
2. In a bowl, cream the butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition. Then, fold in the vanilla sugar, almonds, and desiccated coconut.
4. Sift the flour and baking powder over the mixture, then gently fold it in. Be careful not to overmix.
5. Pour the batter into a greased cake tin and bake for 40 minutes, or until golden and a toothpick inserted comes out clean.

Serving Suggestions:

You can enjoy this coconut cake as it is, but for an extra touch, try a light topping. Here’s a simple, flavorful version I often use:

Light Coconut Topping:
50 g melted butter
2 tsp vanilla sugar
1 egg yolk
2 tbsp desiccated coconut
2 tbsp sugar

Mix all the ingredients together. Once the cake has cooled slightly, poke a few small holes in the top and drizzle the mixture over. Let it rest for a few minutes before serving to let the flavors soak in.

For an alternative, serve the cake plain with lightly whipped cream and some fresh berries like raspberries. It’s a fresh, elegant way to enjoy this classic treat!

Feta Cheese Pasty

When I am really hungry but to lazy to cook something, I love to come up with easy recipes that are delicious and can be done in less then half hour. So the other day when I felt hungry, I checked what i had at home to make something quick and easy for an evening snack. I found the perfect ingredients for a tasty hot feta cheese pasty: herbs, feta cheese and puff pastry dough.




It is really easy to make the pasty. Basically, I just cut of a piece of the puff pastry dough and rolled it out with some flour to make it non-sticky. I cut up some feta cheese in a bowl and mixed it with a tea spoon of the herbes de provence and mixed well. 


I took some of the filling and put it on one side of the rolled out dough and folded the other side over. I folded the edges twice and pinched it so that the filling will not leak through once melted in the oven. I made small holes with a fork in the pasty so that hot are would come out. I put the pasty in the oven for 10-20 minutes on 200 C degrees and out came the most delicious and cheesy pasties :)




Best way to enjoy one of 
 these feta cheese pasty is with a cup of nice tea. Hope you will give this easy pasty a try. Trust me, you will go back to make it over and over again :)

National Cupcake Week - Vanilla Cupcakes with Haribo Candy Fluff Frosting

This week being the national cupcake week, I was inspired, to bake some cupcakes today, by my friend who decided to make cupcakes every day of this week. Very ambitious!! I decided to make cupcakes today, especially as it is the cake and bake show tomorrow. I am setting the mood already today by baking :)


Cupcakes come usually with some sort of frosting. The usual one is the butter cream frosting or the cream cheese frosting. I am not a big fan of both of these. However, I have discovered something called fluff. You can basically make anything into a fluff. So I decided to make haribo candy fluff. 

There are different recipes of how to make this fluff. The one I used is as following:


Ingredients: 3 dl double cream, 80 g of haribo mix candies.

Process: Heat up the double cream in a saucepan but do not let it boil. Put in the candies and stir until the candies have melted. Put the mix in the fridge and let it set for about 4-6 hours. After the mix is set, whip the mix with a little but more double cream until it becomes fluffy.

The recipe for the actual cupcake, I used Mary Berry's perfect Victoria sandwich recipe which I have tasted before and it is really good. The cupcakes were delicious and I simply decorated them with some princess sprinkles.

Swedish Cinnamon Rolls (Kanellbullar)

 I am finally done with the baking for today. I baked some cupcakes and Swedish cinnamon buns (kanelbullar) which are the best cinnamon buns in the world according to me. 



The idea is to take some of these delicious buns to the cake and bake show tomorrow and invite Eric Lanlard to try one :) We will see how that goes.

A recipe will come later for these delicious buns. They take such a time to bake, but I love how they make the whole house so fragrant of delicious cinnamon and they are at the best when you enjoy them with a nice cup of hot tea, yum. I love the sugerpearls on top. I have asked friends from Sweden to bring them for me when they come and visit me as I haven't seen them here in UK. Anyone who knows where I can find them in London area?
