Spicy chicken chilli baguette - A taste of my school days


There’s something incredibly comforting about food that brings you back to simpler times. For me, one bite of a chicken chili baguette instantly transports me back to my high school and college years – long afternoons with my girlfriends, cozy corners at our favorite café, Mackmakeriet, and that unbeatable feeling of satisfaction after surviving a tough science test.

Mackmakeriet wasn’t just a café; it was our spot. A little sanctuary where we could drop our bags, order our favorite sandwiches, and talk about everything and nothing for hours. Out of all the delicious options, the chicken chili sandwich stood out. It was warm, spicy, creamy, and packed with flavor – perfect for those sleepy, post-exam afternoons when your brain felt like mashed potatoes. At least I did.

Sometimes, when my hunger was on another level (when you could eat anything), I’d go all in – order a whole baguette, half chicken chili, half chicken curry. It was the ultimate combo. I still dream about that flavor explosion.

Today, I want to share a version of that delicious baugette. It might not be exactly like the one from Mackmakeriet, but it’s close enough to make your soul smile :)

Ingredients:

    • 2 cooked chicken breasts, shredded or chopped
    • 1 small red chili, finely chopped
    • 1/2 red onion, sliced
    • Pickled jalapeños
    • 2 tbsp mayonnaise
    • half cup crème fraîche or sour cream
    • 2-3 tsp sweet chili sauce
    • 2 tsp paprika powder
    • Salt & pepper to taste
    • A squeeze of lime juice
    • Fresh coriander or dried parsley (optional)
    • Your favorite bread: baguette, ciabatta, or toast

    Optional add-ons:

    • Crisp lettuce
    • Tomato slices
    • Cheese (melts beautifully if you toast the sandwich!)

Metod:

  1. Boil or pan-fry the chicken until fully done and season with salt, pepper and red paprika powder. Let it cool slightly, then shred or chop it finely. 

  2. In a bowl, combine chicken, chopped chili, crème fraîche, sweet chili sauce, paprika, lime juice, salt, and  paprika powder. Stir until creamy and well-mixed. Taste and adjust seasoning if needed.

  3.  Slice open your bread and generously spread the chicken chili mix inside. Add red onion slices,  jalapeños and if you like lettuce and tomato. Sprinkle over dried parsley.

  4. Toast (optional but heavenly): For that café-style experience, toast the sandwich slightly in a panini press or oven until warm and lightly crispy.

That first bite...

Spicy and creamy with that perfect tang and crunch from red onion and jalapeños – it’s exactly what my younger self needed after battling Newton's laws or balancing chemical equations. And let’s be honest, it still hits the spot today after a long meeting or a rainy walk home.

Evening Sandwich Delight – A Cozy Treat Made by Hubby

Ending the day with a comforting meal is pure bliss, and for me, nothing beats the joy of my evening sandwiches – especially when they’re made by my husband. It’s become a little ritual that I absolutely adore. Last night, he outdid himself again, creating four different kinds of delicious open-faced sandwiches, each one packed with flavor and made with so much love. The base for all of them was frökusar, a wonderfully hearty and flavorful bread filled with seeds, adding the perfect texture and taste to every bite. Last night, he outdid himself again, creating four different kinds of delicious open-faced sandwiches, each one packed with flavor and made with love. We bought them, but I am sure there is a recipe for how to bake yourself. I need to check this. 

Here’s what was on the menu:

🥪 Skagenröra sandwich – A creamy and indulgent seafood delight.

🥪 Butter, cheese & fresh veggies – Smooth butter, topped with cheese, crisp lettuce, juicy tomato, and refreshing cucumber. A simple yet perfect combination.

🥪 Cheese, tomato, cucumber & olives – A mix of creamy cheese with tomato, cucumber, and olives. A Mediterranean touch!

🥪 Feta cheese, tomato, cucumber & olives – Another Mediterranean-inspired delight, this one with the bold, tangy flavor of feta cheese blending beautifully with the fresh veggies.

Each bite was a perfect balance of flavors, and of course, the best way to enjoy them was with a warm  cup of tea.

I love how food can bring warmth and love into everyday moments, and I’m so grateful for my husband’s thoughtful evening sandwiches. Simple, homemade meals truly are the best!

Chicken sandwich with pickled red onion

Last weekend I was in the mood for a quick and delicious meal using the leftover chicken we had, transforming it into something nice. I made a mouthwatering Chicken Sandwich with Pickled Red Onions. This sandwich was not only bursting with flavour but also incredibly easy to make, especially when you have some leftover chicken on hand. Plus, with the addition of a special KFC-style buttermilk mayo, every bite was a delight. Let's dive in!



Ingredients:

 Leftover cooked chicken (shredded or sliced)

1 cup pickled red onions (homemade or store-bought)

4 burger buns or sandwich rolls

KFC-style buttermilk mayo (store-bought or homemade)

Fresh basil leaves

Optional: Sliced tomatoes, avocado, cheese


Method:

 1.       If you haven't already, shred or slice your leftover cooked chicken into manageable portions.

Ensure you have your pickled red onions ready. If you haven't made them yet, check out my quick pickled red onion recipe.

Gather the rest of your ingredients, including the burger buns or sandwich rolls, KFC buttermilk mayo, basil leaves, and any optional toppings you desire.

2.       Take each burger bun or sandwich roll and spread a generous amount of KFC-style buttermilk mayo on both the top and bottom halves. Layer the bottom half of each bun with a portion of shredded chicken, followed by a hearty helping of tangy pickled red onions on top of the chicken, basil, and any other topping of choice. Finally, place the top half of the burger bun or sandwich roll on top to complete the sandwich.


Pair them with your favourite sides, such as potato chips, coleslaw, or a crisp green salad, for a satisfying meal.

Don't forget to have plenty of napkins on hand, as these sandwiches can get delightfully messy with each flavourful bite!

With just a few simple ingredients and a little creativity, you can transform your leftover chicken into a culinary masterpiece. This Chicken Sandwich with Pickled Red Onions is a testament to the beauty of using what you have on hand to create something truly delicious.

Tasty Halloween sandwiches

After a fun and long day filled with trick-or-treating, it's time to unwind and relish the evening with a horror classic, preferably The Ring 1. To make the most of the experience, we're preparing deliciously spooky sandwiches. My specialty is grilled tomato and cheese sandwiches, which are quick to make with a sandwich grill and taste eerily delightful. Wishing you a Happy Halloween!

Ingredients:
sandwich bread
butter
tomatoes
dried oregano
slices of cheese
olives

Method:
1. Spread butter on a slice of sandwich bread, layer with cheese and tomato slices, then sprinkle oregano on top. Cook in a sandwich grill or oven until it's golden brown. The result is a gooey and delicious treat. Serve with pitted olives for an insanely good taste. P.S. Arrange the olives to resemble a ghost. : )

Tuna and egg sandwiches - recipe

My husband and son love tuna, but I can't seem to develop a taste for it. Nevertheless, I don't hesitate to prepare it for them. They're particularly fond of a sandwich filling I make. My husband also enjoys making tuna melt sandwiches in our sandwich maker, which is another great option, though we'll save that for later as my son struggles to bite through the crusty bread.
Ingredients:
1 can of tuna in water
2 boiled eggs
2-3 tbsp mayo
1 tsp aromat Knorr seasoning

Method:
Start by draining the tuna of its liquid and place it in a bowl. Incorporate two hard-boiled eggs and mash them together with the tuna. Stir in the mayonnaise and seasoning, then taste and adjust with salt and pepper if desired. Spread the mixture onto your preferred type of bread to create a tasty sandwich.

Sandwich Ideas

Sandwiches is something I eat often and for every meal if I may choose. Bread is my biggest problem. I love it and I love it a lot. But I have come to the conclusion that it is OK as long as we eat them in moderation. For a girlfriend's birthday party I opted to do the sandwiches, as I have done so many different ones and with lots of variations in my life. No one protested :). I used white and brown  square bread as well as brown bread rolls. Tried to use different spreads and fillings, but ended up with classic fillings to make sure there were no surprises for picky eaters.



1. Smoked salmon and cucumber. For the first sandwich I used cream cheese as a spread and added smoked salmon and shavings of cucumber that was made by using the cheese slicer to get them evenly thick.
                           


2. Turkey and vegetable sandwich. The second sandwich has a cream cheese spread, roasted onions, cheddar cheese, turkey slice, cherry tomatoes and lettuce.


3. These two sandwiches where cut in 4 squares and served with some crisps. I have never seen any where else where they add crisps in their sandwiches, but here they do. Have to say that the crunchy sandwiches are delicious.



 4. Egg and potato sandwiches. This filling was little more dense than the other two but they got a high mark too. Boiled eggs and boiled potatoes were mixed in a bowl. I added 2 tbsp of mayo, curry powder, paprika powder and water cress. Salt and pepper to taste and then cut in halves.


5. Scrambled egg sandwiches. The last filling was scrambled eggs on buttered toast with water cress. All sandwiches got thumbs up and the plates were soon empty to my happiness. 


Hope this post will give a few ideas of different sandwich fillings from the normal everyday sandwich.

Toddler Lunch and Snack Ideas

Having a toddler in the house that loves his food has made me thinking of various meals that I can offer without it getting to repetitive . I try to to make new meals almost everyday so that he can enjoy something new and tasty everyday. I feel that by giving him new flavours everyday it has made him less fuzzy and open for new ideas and tastes. So here follows different meal ideas of what I give him.

Lentil and sweet potato mash. Boil them together and season with mustard seed, ground ginger, garlic, coriander and cumin. 


Oven baked french fries and fish fingers 


Orzo pasta mixed with a pasta sauce, topped with grated cheddar cheese.  Pasta sauce is made on a mix of marinara sauce mixed with fried minced meat and vegetable. 


Mini star pasta mixed with a minced meat pasta sauce. Sauce is made by cooking a pasta sauce with carrots, onions, various vegetable and minced meat and then processed to a smooth puree. 


Lentil stew with rice. The stew is cooked by boiling the lentils until soft. Seasoned with mustard seed, paprika powder, mild curry powder, coriander, cumin and dried parsley. Salt and pepper. Process the stew until it is smooth. Add a handful of uncooked rice and a friend medium onion and let it simmer until thick. 
                           


Snack: chopped strawberries and blueberries. Try to give these before they are out of season.

Prawn, Egg and Mayo Sandwich (Räkmacka) - Recipe

The Swedish Räkmacka is a very famous sandwich with prawns in Sweden and found in almost all cafes and and places that serve food. It is a favorite sandwich especially when you are traveling or on a road trip. I have eaten it countless times whenever we went somewhere and wanted to grab something quick and filling in a nice cafe on the road. My favorite place to eat the prawn and egg sandwich has to be when we used to take the ferry to Denmark.

This prawn, egg and mayo sandwich is an open style sandwich, which is the case of most sandwiches in Sweden. I am used to that and like it that way. It is also more healthy, as your sandwich has less bread if you want to go for less carbs. It is very easy to put to together and takes no time to make. To me, the bread for this specific bread has to be the Swedish Polarbröd which is a round compact sandwich bread, yet very soft and juicy and perfect for the prawn and egg sandwich. The closest I have seen here in UK is the Warburtons Soft Sandwich Thins. It has same texture and similar soft and juicy taste.


Serves: 4 sandwiches

Ingredients:

4 warburtons sandwich thins
1 cup of cooked and peeled prawns
2 tomatoes, thinly sliced
4 hard boiled eggs, sliced
lettuce
lemon, sliced
dried dill
orange paprika, sliced
mayo
roasted onions
butter

Method:

1- Spread some butter on each sandwich.



2- Wash the vegetables and boil the eggs to your taste and slice everything.


3- Start to arrange the vegetables on each sandwich. Sprinkle some of the roasted onions on the buttered bread and place the lettuce on top of it. Continue with the some mayo, tomatoes, paprika, egg slices and some more mayo. Finish of with the prawns and some slices of the lemon. Sprinkle over some dried or fresh dill.
