Pizza Sandwich - Pizzamackan!

With the advent of social media, it's become incredibly easy to discover new recipes online. One of them that caught my eye on Instagram is the pizza sandwich. It was Helan Shabani who shared her pizza sandwich, and my friends and I were immediately hooked. We actually made this sandwich on a girls' trip together. While I didn't have the right dough on hand, it turned out delicious nonetheless. Although, in hindsight, we should have made them smaller. But when the eyes are hungry...

 

Ingredients:

 Pesto (store-bought or homemade)

Red onion

Arugula

Garlic cloves

Cherry tomatoes

burrata or mozzarella

Fresh basil

Crema di balsamico

Balsamic vinegar

Store-bought pizza dough

Instructions:

 1. Preheat the oven and roll out the dough to the desired size for the sandwich. Bake the pizza dough according to the instructions provided. Drizzle olive oil on one half of the pizza, fold it over, drizzle on top, and slide it into the oven. Remove when it's baked and has a nice golden surface.



While the pizza is baking, slice the tomatoes and marinate them in finely chopped basil, grated garlic, olive oil, chopped red onion, and balsamic vinegar to taste. Add salt and pepper according to your preference.


Let the bread cool, spread pesto on it, top with the tomato mixture, and spread the burrata or mozzarella on top of the tomatoes. Finish with arugula and drizzle crema di balsamico over it. Cut into desired pieces and enjoy!

Fast food on your way home

I'm on my way home and thinking about what we should have for dinner. One of my favorite go-to fast dinners is pizza. I usually buy a margherita pizza base and customize it with whatever leftover veggies or toppings I have on hand. Typically, I use bell peppers, squash, corn, mozzarella cheese, chicken, or whatever leftovers I have from yesterday's dinner.

 I chop up all the veggies, sprinkle them over the pizza, add extra cheese, and bake it in the oven until golden brown. I usually serve it with a fresh green salad and ice-cold cola. Yum

Pizza with Homemade BBQ Sauce - Recipe


Whenever I ask family about dinner preferences, pizza frequently emerges as the easy favorite. The topping of choice is chicken, sweet corn, and BBQ sauce. Preferring not to purchase store-bought sauce due to its sometimes artificial taste, I enlisted my family's help to find an easy BBQ sauce recipe online. We experimented with various recipes and ultimately created our own unique blend. It was a hit with the family, and now it's our go-to sauce for pizzas.

Although I occasionally use pre-made pizza bases, I also enjoy making my own dough. My go-to recipe for quick pizza dough uses baking powder instead of yeast, eliminating the lengthy wait for the dough to rise.
Ingredients:

Pizza Dough:
6 dl of flour
2 tsp of baking powder
1.5 tsp of salt
100 g of butter
2 dl of milk

BBQ Sauce:
1 cup of ketchup
1 cup of water
3 tbsp of balsamic vinegar (or apple cider vinegar)
3 tbsp of brown sugar
1/2 tbsp of fresh ground black pepper
1/2 tbsp of onion powder
1 tsp of garlic powder
1 tsp of smoked paprika
1/2 tsp of ground cumin
1/2 tsp of ground coriander
1/2 tbsp of ground mustard
1 tbsp of lemon juice
1.5 tbsp of Worcestershire sauce
Salt and pepper to taste

Topping:
Grated cheese,
Diced grilled chicken breast,
Sweetcorn.

Method:

1- Preheat the oven to 210°C.

2- Begin by combining flour, salt, and baking powder in a large bowl. Incorporate the butter and milk, starting with a wooden spoon and eventually using your hands to mix it into a dough. Adjust with additional flour or milk if necessary. Then, transfer the dough onto a floured surface, knead for a few minutes, and shape it into a round ball.

3- Lightly flour the surface and roll the dough into your desired shape. I typically shape it into a square for easy cutting of uniform pieces.

Although the photo below shows a pre-made base, I normally use this recipe for pizza dough.


Place the pizza base in a greased oven tray and spread your BBQ sauce on top. Add the toppings, then bake in the oven for 20-30 minutes, or until it appears fully baked. Serve with a fresh and tangy pizza salad and dressing.

Fast Pizza - Recipe

A quick pizza is often the ultimate comfort food when you're short on time to prepare a meal from scratch. I purchased three pizza bases with tomato sauce and cheese already on top, then simply utilized whatever ingredients I had at home today to add on top and baked them in the oven.

 

The ingredients I used include the following (which can be adjusted according to taste):

 


  • Diced, grilled chicken breast (details on how I grill the chicken will be shared in a later post)
  • A half green bellpeper, grilled
  • A quarter of a small eggplant, grilled
  • A quarter of a leek, grilled
  • Sweetcorn
  • Tomato, sliced
  • Sea salt to taste
  • Cheese

After grilling the bell pepper, eggplant, and chicken in a pan, I sprinkled the grilled ingredients, along with the tomato, sweetcorn, and extra cheese, over the pizza base. Then, I preheated the oven to 190 degrees Celsius and baked the pizza for about 15 minutes. However, please note that all ovens are different, so your pizza might require more or less time in the oven. Keep an eye on it, and once it turns golden brown, it should be ready.

 

I recommend serving a nice cabbage or green salad alongside, as we often do in Sweden. :)



Now, I've only tried out these specific ingredients on the pizza this time. However, feel free to use whatever toppings you desire. You can add salami, mushrooms, mozzarella cheese, other veggies, etc. Let your imagination run wild when making your pizza! The key ingredient is an already made pizza base with tomato sauce and cheese, which makes the baking process very simple and ensures a dinner ready within 30 minutes.
