A Summer Delight at The Ground – Veil patties, Mashed potatoes and Gravy

During a beautiful summer day, my family and I visited The Ground restaurant in Hovdala close to Hässleholm, a charming spot offering delicious food and breathtaking views. 

With outdoor benches and take-away boxes, we enjoyed a memorable meal of veal patties, mashed potatoes, served with rich gravy and tangy lingonberry jam. The kids absolutely loved it, and the simplicity of sitting outdoors, surrounded by nature, made the experience even more special. The dish was both comforting and flavorful, perfect for the season. Here's my take on this fantastic meal. 


Ingredients
For the veal patties:

500g veal mince
1 egg
1 small onion, finely chopped
50ml milk
2 tablespoons breadcrumbs
Salt and pepper to taste
Butter for frying

For the mashed potatoes:

800g potatoes, peeled and chopped
100ml milk
50g butter
Salt and white pepper to taste

For the gravy:

25g butter
2 tablespoons flour
300ml beef stock
100ml double cream
Soy sauce (optional) for color
Salt and pepper to taste

To Serve:
Lingonberry jam
Arugula 

Method: 
1. In a bowl, mix veal mince, egg, chopped onion, milk, breadcrumbs, salt, and pepper. Shape the mixture into small patties.
2. Heat butter in a pan and fry the patties over medium heat until golden brown and cooked through (about 4-5 minutes per side).

3. Boil the potatoes in salted water until tender (about 15-20 minutes). Drain and mash the potatoes with milk, butter, salt, and white pepper until smooth and creamy.

4. Melt butter in a saucepan, stir in flour, and cook until golden. Gradually add the beef stock, whisking constantly to avoid lumps. Add cream and season with salt, pepper, and soy sauce if desired. Let the sauce simmer for a few minutes until it thickens.

5. Plate patties, alongside the creamy mashed potatoes. Drizzle with the rich gravy and serve with a generous spoonful of lingonsylt on the side.

Fake aoli with lemon - recipe

 

Today's culinary adventure took us to Lidl for a quick grocery run after a fun-filled day at the playground. While the kids clamored for chips and meatballs, my craving led me to indulge in calamari and aioli. With little time to spare, I had to get creative and whip up a faux aioli that turned out to be a delightful surprise. Even the little one couldn't resist dipping their chips in it and gave it their seal of approval!


Ingredients:
2 tbsp creme fraiche
1 tbsp mayo
Dash of lemon pepper mix
Salt and pepper
Paprika powder 
Lemon juice

Method:
1. In a mixing bowl, combine the creme fraiche, mayonnaise, lemon pepper seasoning, salt, pepper, paprika powder, and a squeeze of fresh lemon juice. Mix everything until well combined, adjusting the seasoning to your taste preferences.

2. Chill the aioli in the refrigerator until ready to serve. Pair this creamy delight with freshly cooked calamari for a burst of flavor and texture.

Feel free to adjust the spices according to your liking, and get ready to be pleasantly surprised by the creamy goodness of this quick and easy aioli.

Battered Fish with Wedge Potatoes and Delicious White Sauce - Recipe

Fish is something we often eat in many different ways. But sometimes I cant be bothered to cook it fresh and to be honest crave the battered fish fillets by Birds Eye. It always reminds me of the fish we used to get in school which used to be served with a white cold sauce. I always took seconds the day 
it was served.

Ingredients:
2 battered fish fillets (home made or store bought)
potato wedges for oven bake

2 dl sour cream
2 dl mayo
3 tbsp pickled cucumber relish
2 tsp dried dill
salt and pepper to taste
lime

Method:
1. Begin by put the potato wedges and the battered fish in the oven according to instructions.

2. While that is being done, prepare the lovely white sauce that goes so well with fish and is to served cold. Also called vit fiskås in Swedish. Mix all the rest of the ingredients in a bowl. Put it in the fridge to cool. Once everything is done, serve it one a plate with the sauce and slices of lime.

Pizza with Homemade BBQ Sauce - Recipe


Whenever I ask family about dinner preferences, pizza frequently emerges as the easy favorite. The topping of choice is chicken, sweet corn, and BBQ sauce. Preferring not to purchase store-bought sauce due to its sometimes artificial taste, I enlisted my family's help to find an easy BBQ sauce recipe online. We experimented with various recipes and ultimately created our own unique blend. It was a hit with the family, and now it's our go-to sauce for pizzas.

Although I occasionally use pre-made pizza bases, I also enjoy making my own dough. My go-to recipe for quick pizza dough uses baking powder instead of yeast, eliminating the lengthy wait for the dough to rise.
Ingredients:

Pizza Dough:
6 dl of flour
2 tsp of baking powder
1.5 tsp of salt
100 g of butter
2 dl of milk

BBQ Sauce:
1 cup of ketchup
1 cup of water
3 tbsp of balsamic vinegar (or apple cider vinegar)
3 tbsp of brown sugar
1/2 tbsp of fresh ground black pepper
1/2 tbsp of onion powder
1 tsp of garlic powder
1 tsp of smoked paprika
1/2 tsp of ground cumin
1/2 tsp of ground coriander
1/2 tbsp of ground mustard
1 tbsp of lemon juice
1.5 tbsp of Worcestershire sauce
Salt and pepper to taste

Topping:
Grated cheese,
Diced grilled chicken breast,
Sweetcorn.

Method:

1- Preheat the oven to 210°C.

2- Begin by combining flour, salt, and baking powder in a large bowl. Incorporate the butter and milk, starting with a wooden spoon and eventually using your hands to mix it into a dough. Adjust with additional flour or milk if necessary. Then, transfer the dough onto a floured surface, knead for a few minutes, and shape it into a round ball.

3- Lightly flour the surface and roll the dough into your desired shape. I typically shape it into a square for easy cutting of uniform pieces.

Although the photo below shows a pre-made base, I normally use this recipe for pizza dough.


Place the pizza base in a greased oven tray and spread your BBQ sauce on top. Add the toppings, then bake in the oven for 20-30 minutes, or until it appears fully baked. Serve with a fresh and tangy pizza salad and dressing.
